Description of my issue:

I have created another site, but want to add the categories and articles from an existing site onto the other site. Is it possible to just create a backup of these files, then restore them onto the other site?

No, that's not possible because they are not files and what you describe is not a backup. The explanation is very technical. It suffices to say that what you describe is impossible to achieve with any tool within any degree of accuracy. It all has to do with the way articles and categories reference assets entries which, in turn, reference ACL groups and privileges. The way the whole content and ACL system works in Joomla! makes it impossible to take a bunch of articles and transfer them to another site in a way that makes you 100% confident that the transferred articles will display, retain the correct ACL privileges and link to each other correctly. FYI, what you describe is actually called "site synchronisation" or "content synchronisation", not "backup".
