I have been a customer for a long time. I see that my sites are no longer going to Amazon S3

When i edit the backup configuration or use the configuration wizard I can no longer find the option for post processing?

How can i send my backups to Amazon s3?

You need to make sure that you have installed Akeeba Backup Professional and Akeeba Solo Professional. You currently have the Core versions installed or some files were not copied correctly during update. Luckily, it's fairly easy to fix that!

For Akeeba Backup for Joomla!, download the ZIP file of the Professional version (make sure its name ends in -pro) and install it from Extensions, Manage twice in a row, without uninstalling it before or in between. This will work around a Joomla! issue that causes the extensions updater/installer to "forget" to copy some files.

For Akeeba Solo, download the ZIP file of the Professional version (make sure its name ends in -pro). Extract it locally and upload all the files to your Akeeba Solo installation.

Please note that you will only see the Amazon S3 options in the Configuration page, NOT the Configuration Wizard! The wizard will in fact reset the Post-processing Engine option to "None". After running it you need to go to Configuration, find the Post-processing Engine option and set it to Upload to Amazon S3 and configure it, as you already know.
