Where is the .sql file stored as part of the backup?.

Its say full site backup but I can't locate the .sql dump file to restore the db.

The database dump is located in the backup archive, in the /installation/sql folder.

Are you referring site.s01 to site.s10 files?

Can you tell me about this file structure? is this several files each containing a number of tables? or does the site.sql contain the entire dump?

All of the files taken together contain the entire dump. I believe the files are broken on file size, so you may have a single table split across multiple files. The files are in a standard SQL dump format. If you were manually importing them through phpMyAdmin, you would use the SQL format and import them in numeric order, I'm pretty sure the site.sql file would be the final file.
