I would like to backup and restore only changes that have been made within a particular module that i run on my site as well as image uploads. I restrict my users to only make changes using Quix which is a page editor module.

Is it possible to only take changes they've made using that module and back those up and restore those to a different server?

No, you can't backup only changes made by a particular module or component.

What you can do is backup only a particular folder or folder tree and only particular tables. You would accomplish this by excluding everything else. This is really tricky stuff, you have to watch the data dependencies. For example, a Joomla! article depends on the categories table and the users table, the users table depends on the ACL table, and so on. If you get a situation where some of the supporting data changed (a new user, for example) the whole thing would crash and burn. The safest way is to do the whole site, but that isn't the fastest.
