I found a lot of files in /administrator/components/com_akeeba/backup folder named:
akeeba_backend.id123
akeeba_backend.id123.log
akeeba.json.id123
akeeba.json.id123.log

All .log files are empty (I set Log Level to None to save space), but some akeeba_backend.id and akeeba.json.id are very large files.

Can I safely delete all those files?

Salve,

per prima cosa le consiglio di evitare di impostare il livello di log su Nessuno. Nel caso ci sia qualche problema diventa molto più difficile identificarne la causa.
I file di log vengono automaticamente rimossi nel momento in cui il backup a cui si riferiscono sono cancellati (sia manualmente che per effetto dell'applicazione delle quote di backup).
Per quanto riguarda quei due file, li può cancellare tranquillamente. Giusto per sicurezza, qual è la loro dimensione? Se i file sono molto grandi (ad esempio intorno al Gb) vuol dire che qualcosa di anomalo è successo e sarebbe opportuno dargli un'occhiata.
