Hello support team,

The email I get after a backup is run contains the following WARNING:

Warnings : POTENTIAL PROBLEMS DETECTED; 1 warnings issued (see below).
You are using PHP 7.0.33 which is officially End of Life. We recommend using PHP 7.3 or later for best results. Your version of PHP, 7.0.33, will stop being supported by this backup software in the future.

However, when I interrogate the server via the hosting Control Panel or via the Joomla's menu "System"->"System Info", the PHP version is reported to be 7.3.3

Without a backup log I can only guess why you're getting the warning message.

I think you're running a command line backup from a CRON job. Remember that the command you're running includes calling a particular version of PHP at the beginning of the command. So your website may run PHP 7.3 but your CRON backup runs the version you tell it to in the command line.

If my guess is right, all you have to do is ask your host what the proper path is to the 7.3 PHP-CLI executable and substitute that in your CRON command line.
