I keep my servers' TZ UTC. How would I select UTC in Application configuration?

You can go to System Configuration and set the Server Timezone and Backup timezone to GMT.

Technically (and if you want to be an absolute joy of a pedant at cocktail parties) GMT is the time zone and UTC is the time standard (reference). So while we tell our servers to set their clock to UTC what they do, in fact, is set their clock to GMT. In case you're wondering why, it's because "UTC" is an alias to "GMT" in the timezone database used, among other software, by Linux and PHP.

TL;DR: As far as computers are concerned UTC and GMT is the same thing.
