Is it possible to have UNiTE delete the contents of a restore location before restore? And to change ownership from root to apache? Is this usually done with a bash script?

Or is it already a feature and a misconfiguration on my end?

No, UNiTE cannot perform these operations. The reason is that, as you correctly guessed, that's the purview of a shell script which performs a series of operations, one of them being running UNiTE.

Thanks Nicholas.

I'm a novice, but UNiTE came together for me. After a few minutes of wrapping my brain around it, it's very simple.
I used your suggestion in this thread for restores on cron: https://www.akeebabackup.com/support/desktop-utilities/Ticket/31430:using-unite-to-restore-backups-for-verification-purposes-realistic.html

The only change I made in scripting was to use a date variable and a wildcard for the s3cmd download, the wildcard replacing the minutes in the archive name, and saving it to a static name for the xml
