To restore a site without a database, in this case dokuwiki, I setup an empty/dummy database. That works fine and I really have no problem with it. I did so understanding from the documenation that a database entry was necessary.

Is there another way around it?

When taking a backup? No. You always need a database, even a dummy one.

When restoring a backup? Well, of course. Extract the backup archive with Kickstart. Delete the installation folder. You do not need to run the installation script in your browser or through UNiTE. The restoration script when you're using the ANGIE for bespoke sites is only used to restore the database. Since you don't have a database you don't need to run it.
