Description of my issue:

Hello,

I want to backup a huge static HTML website and as I love akeeba backup so much, I was hoping to use it to backup the static HTML. Due to a misunderstanding with our hosting company we were close to losing the whole site. Luckily we could restore it from their backups. I found that experience very very scary.

Yes, you can with Akeeba Backup Professional. All you need is a Joomla! site which can read the files of your static website (e.g. a small Joomla! installation in a subdirectory; you can have that Joomla! site in Off-Line mode).

Create a new backup profile. Set the backup type to "Site files only". Scroll a little further down. Check the Site Root Override. In the Force Site Root below it use the folder button to browse to the static site's root. Done!
